Back in 2005 I attended a Maptek Vulcan users' conference at the Silver Legacy in Reno, Nevada. In the main casino there was this giant head frame. It had moving parts and stood several stories high. This picture doesn't do it justice. I thought it was a spectacular homage to the mining history of the region.

Chicken Alfredo - 17 Day Diet Recipe
Chicken Alfredo
Granted, this isn't really a Chicken Alfredo recipe in the classic sense, but is tastes great so who cares.
Ingredients:
4 chicken breasts- cubed
1 green pepper
1 red pepper
3 cups broccoli
1 cup sliced mushrooms
1 12 oz. can chicken broth
1 8 oz. bar fat free cream cheese
1 packet Ranch dressing powder mix
Instructions:
Saute chicken in olive oil. Add vegetables and half of the chicken broth. In a separate sauce pan heat: half of the chicken broth, cream cheese and the Ranch dressing mix. Add sauce to saute pan and serve.

Curry Chicken - 17 Day Diet Recipe
Curry Chicken
This recipe is low fat, low carb and tastes terrific. If I wasn't on the 17 Day Diet, I would serve this over rice or noodles but it's great just the way it is.
Ingredients:
5 Chicken breasts cubed
1 Anaheim Chili
1/2 tsp. minced ginger
1/2 cup chicken broth
1 tsp. salt
1/2 cup plain, fat free Greek yogurt
3 tbsp. olive oil
1/2 tsp. minced garlic
1/4 cup diced onion
Spice Mix
1 tsp. cardamom
1/2 tsp. turmeric
4 tbsp. curry powder
1/4 tsp. black pepper
1 tsp. cumin
1 tsp. cinnamon
1/4 tsp. chili powder
Instructions:
Saute spice mix, onion and the Anaheim chili in olive oil and 3 tbsp. of the chicken broth. Add chicken and brown. Add chicken broth, ginger and salt. Simmer for about 15 minutes. Remove from heat and stir in yogurt.

Carnival Towel Animals
We thought these towel animals were so neat that we went to the towel folding class on board. Towel folding was fun but there was an unexpected surprise that I will have to post about soon.
